I don’t know about all of you; but to me when school starts back up I feel like life gets a little more chaotic. Both my boys are in school now. Jack is in the second grade at one school and Easton goes to afternoon preschool at different school. Which means that I get to got to the schools 4 times a day. While also doing laundry, taking care of Hailey cleaning the house and of course sewing. This leaves me little time for thinking about dinner. And who wants to think about dinner when we could be sewing?
Which is why I am so grateful I am in a freezer meal swap. There are 4 of us in the group. So we each make 2 different meals times four. So for example this month I made Cilantro Lime Chicken and Chicken Broccoli Alfredo; I made 4 of each of those meals. One for and one for everyone else in the group. I end up with 8 different meals. This is so nice because at least 2 times a week I make one of theses meals. It has seriously cut down on us eating out too. Which is so nice,
We meet once a month and I thought that I would start sharing with you guys my recipes. Some of these I found on Pinterest (follow me “ChooChoo Skadoo”) and some are my personal recipes.
The first recipe is Chicken Broccoli Alfredo. This is my own personal recipe and its nothing fancy.
You will need:
1 bag of frozen broccoli (16 oz)
2-3 chicken breasts (cut into either 1″ squares or strips)
1 jar of Alfredo sauce (16 oz)
Now here is the hard part. Place all the above ingredients into a gallon zip lock freezer bag. Ok, so maybe its not that hard.
Then freeze it. Cook in a crock pot for 4-6 hours on low. Then serve over pasta. I love to store my pasta in the Spaghetti Dispenser from Tupperware.
